method:
whole lamb sourced from phillip warren is rubbed in salt, pepper and oregano, skewered, then slowly roasted over open flame. this process ensures the meat remains succulent and tender, oregano is a quintessentially greek herb that delicately enhances the lamb's inherent flavor.
on the side is tzatziki - made with yoghurt, mint, grated cucumber, garlic, olive oil, and salt. the use of mint over the traditional dill better suits the flavor and quality of the lamb. a shaved white onion, sumac and lemon dressing is added alongisde, cutting through the fat, adding tangy freshness to the dish.
